CONFESSION: I’ve been eating cake for breakfast this week. *sigh* Yes, a delicious sugary carb bomb every morning. This obviously inspired me to share a few Kate Spade items that I love {none of which I own, unfortunately}.

The Back Story: One day I was browsing, dreaming and lusting over pretty things on Pinterest and came across a recipe for a banana upside-down cake. I was intrigued and of course followed the link to a blog post where the recipe was posted in Polish and in English. I was immediately excited and had to share it with my bestie who is currently living in Poland. It gave me a great idea for our next Skype date – we would each bake the cake and have a slice together while we chatted countries apart. So, we set a date for this past Sunday – I was super excited. I love to bake and love to chat and catch up with my best friend in the entire world, this was going to be fabulous!

Last Saturday I baked my cake in preparation for my chick chat and cake date. That night my love and his best were my dinner dates {I made mini meat loafs & sweet potato tots – YUM!} and my banana upside-down cake taste testers. I wasn’t concerned about cutting into the cake early since I only really needed one slice the next day. My Skype date came and because of glitches with Skype I thought my friend was a no-show. Tears ensued. I’d baked and had been so excited and had been missing my friends like crazy {still am} since moving from VA and always miss BB since she’s SO far away. Turns out she thought I was a no-show too. Thank goodness for Facebook messaging because we got a hold of each other that way and then got things straightened out and were able to get Skype working – whew! While she didn’t forget about me, she did forget to bake. No biggie, and though it would’ve been fun we each made a cup of tea instead. :)

Now you know why I had so much cake to eat. I suppose I could’ve altered the recipe and made cupcakes to freeze, but oh well. Each morning this week I’ve indulged in my banana upside-down cake, at times cutting an actual slice and others just taking a fork to it for a few bites here and there. In my defense it’s better to have your carbs earlier in the day, right? And what’s the difference between eating cake or having a muffin or pancakes?

Moral of my story {kind of}? I’m an advocate for eating cake for breakfast and would love one of the Kate Spade items to display my sweet belief.

Please tell me y’all eat cake for breakfast too?!

xoxo,

No-Bake Almond Butter Oatmeal Dog Treats

31 Tuesday Jan 2012

Here’s an easy no-bake treat recipe for your cold nose & warm hearted friend {your pooch, of course}.

I adapted this recipe to be allergy friendly for myself. In addition to not keeping any peanut butter or milk in the house due to my allergies I also do not purchase dog treats and dog food containing peanuts (or peas for that matter).  I can’t risk having contaminated kisses from my lovey pup that is always passing them out.

All you need is 3 ingredients, a few minutes and a bit of love.

The original recipe can be found at Pretty Fluffy, my fav pretty pooch blog.

Ingredients:

  • 1/2 Cup Almond Milk
  • 1 Cup Almond Butter
  • 3 Cups Rolled Oats

Directions:

  • Combine the milk and almond butter in a mixer until it forms a paste.
  • Add the oats 1/4 to 1/2 cup at a time ensuring they are fully coated and no dry spots form. You will be left with a heavy mixture.
  • Roll out all of the mixture and use a bone shaped cookie cutter to create shaped treats or as in the original recipe scoop out bite sized pieces with a spoon and roll into little balls.
  • Place on a flat tray lined with parchment paper.
  • Put them in the fridge for one hour.

Helpful Notes:

  • Makes 25-30 treats if you roll them into little balls. If you decide to use a cookie cutter the number of treats will vary depending on the cutter size.
  • Treats can last up to 2 weeks stored in the fridge.

Hope your four-legged bestie enjoys!

I woke up this morning with a craving for doughnuts so my love helped make my doughnut wishes come true. After a short drive we were in carb and sweet overload heaven. I was thrilled to be at a Krispy Kreme shop for the first time ever and loved taking in the yummy smells and the doughnut making process {you can watch the magic happen}. I was a kid in a candy shop doughnut shop!

*Note* I was bad today, not just because of the calories, but because I know those fried rings of delicious glazed dough definitely contained dairy and soybean oil. I knew I was up against a tummy ache … it was worth it – this time. Correction, it may have been worth it had I stopped at one doughnut. A little regret & a sick tummy set in later, a little feeling of it was worth it still remains…I mean they were so good and the experience was fun.

It usually is the little things in life that make my day and today it was a visit to a doughnut shop. Actually, it made my weekend.

Hope it was lovely where ever the weekend found you!
